Process: Honey: More than 75% of the bean's natural honey (mucilage) is preserved in the wet milling process in order to achieve a better balance of flavors in the cup. This is produced because the sugars present in the bean are taken to an optimum point of drying in the dry process and during the roasting process they are caramelized, thus enhancing the sweet sensory experience in the cup.
Flavor: It is a very fine and aromatic coffee with extremely exotic flavors, its flavor is similar to fruit tea and flower tea. In the cup it shows a floral aroma, acidity similar to white fruits such as green grapes. It presents a light and delicate textured body. And with a balanced, short and rounded aftertaste. Roast: It is offered in light roast. The light roast brings out the floral aromas, sweet notes and citrus flavors of the variety.
